This is the method I use with new coffee beans I’ve never had before. I use a metal cone on my first brew to get the full flavor and notes of the coffee, and a paper cone on the second to get a smoother brew. I hand grind the beans separately to match the grind recommended for each filter. After that, I know the flavor and character of the new beans and may experiment with other brewing methods.
